Cream Cheese Filled Zucchini Bread

I recently made some delicious cream cheese filled zucchini bread, a recipe passed down from my lovely mother who is a real whiz in the kitchen. This bread is pretty amazing and the cream cheese filling adds a fun and yummy addition - so I just had to share!

You will need:
3 eggs
1 cup oil
1/2 cup sugar
2 cups grated zucchini
2 tsp. vanilla
1 tsp. baking powder
3 cups flour
2 tsp. baking soda 
3 tsp. cinnamon
1 tsp. salt
1 cup chopped nuts (optional)

Filling:
1 egg
8 oz. cream cheese
1/3 cup sugar
1 tablespoon lemon juice

 Combine 3 eggs, oil, 1/2 c. sugar, zucchini and vanilla together. 

Add baking powder, flour, baking soda, cinnamon salt and nuts.

Mix together the filling: 1 egg, 8 oz. cream cheese, 1/3 sugar and lemon juice.

Layer the filling in the middle of the loaf. 

Bake at 350 degrees for approximately 60 minutes in greased and floured loaf pans. Makes two loaves.

Voila!!!

  2. Yum! You know, I've never made homemade zucchini bread, even though zucchini is one of our all time favorite veggies. I love recipes that make two...food is my love language and I love to share the wealth.
